Quinoa with Apples & Pecans
INGREDIENTS:
SERVES 2
- 1/2 cup dry quinoa
- 1 cup liquid (water, rice milk or almond milk) for cooking, plus more for serving
- 1 pinch of salt
- 1 tsp. ground cinnamon, plus more for serving
- 2 Tbsp. chopped raw pecans or walnuts
- 1 apple, chopped
PREPARATION:

The night before cooking, soak the quinoa in water.

In the morning drain the water and rinse the quinoa thoroughly.

Add quinoa and liquid of choice in a medium saucepan.

Bring to a boil.

Stir in salt, and cinnamon and reduce heat to low. Cook, stirring occasionally, until quinoa grains are tender, 8–10 minutes.
- In the meantime, chop or grate your apple.

Top cooked quinoa with apple, walnuts, and more cinnamon, if desired.

Drizzle with almond milk if you want it more runny.
