Quinoa with Apples & Pecans


  • 1/2 cup dry quinoa
  • 1 cup liquid (water, rice milk or almond milk) for cooking, plus more for serving
  • 1 pinch of salt
  • 1 tsp. ground cinnamon, plus more for serving
  • 2 Tbsp. chopped raw pecans or walnuts
  • 1 apple, chopped


  • The night before cooking, soak the quinoa in water.
  • In the morning drain the water and rinse the quinoa thoroughly.
  • Add quinoa and liquid of choice in a medium saucepan.
  • Bring to a boil.
  • Stir in salt, and cinnamon and reduce heat to low. Cook, stirring occasionally, until quinoa grains are tender, 8–10 minutes.
  • In the meantime, chop or grate your apple.
  • Top cooked quinoa with apple, walnuts, and more cinnamon, if desired.
  • Drizzle with almond milk if you want it more runny.
