Zucchini Almond Hummus


  • 1-1/2 Tbsp tahini or
  • 1/2 cup soaked almonds
  • 2 chopped zucchini
  • 2 freshly squeezed lemons
  • 1 tsp. cumin (optional)
  • 1/2 tsp. sea salt
  • 1/4 tsp. fresh ground black pepper
  • 1 clove of garlic, pressed
  • Dash of paprika (for garnish)
  • Mint (for garnish)


  1. Pulse all the ingredients in a food processor until smooth.
  2. Adjust seasoning as needed.
  3. Garnish with mint leaves.

Tahini is a paste made from ground sesame seeds, you could use it instead of the almonds. Add some cayenne pepper if you like it spicier.
